The sweet versions (les doux) are made using the ancient method of passerillage, which consists of dehydrating the grape by twisting the stem supporting the bunch. This cuts the supply of sap and the grapes are left to dry long into the autumn and sometimes into December. The results are stunning. The cellar, located in the village of Puissalicon itself, is an old building which has been renovated and enlarged over the generations. At the time when Languedoc was known for its 'eau de vie', it was even home to a family distillery which no longer exists. As with many of the vineyards in this region, the viticulture philosophy followed is 'lutte raisonnée'.It means the 'reasoned struggle' and is an approach to vine growing that claims to use fewer chemicals than standard vine growers. In theory, it is very similar to organic vine growing, the main difference is that unlike Organic vine growing, Lutte Raisonné does not have any system checks or measurable limits as to what is or isn't permitted. The only measurement is the conscience of the grower. In essence, it is more of a rationale than a discipline. It is 35 kilometres from the sea and situated at an altitude of between 140 and 190 metres. Rimauresq was one of only a small number of vineyards in the region rewarded Cru Classé status when the classification system was drawn up in 1955.Rimauresq, which faces north-west, is found at the foot of the Maures range of mountains. These help create good growing conditions for grapes as it provides morning shade for the vineyard. Consequently, this provides longer ripening periods in the crucial weeks prior to harvest. The vineyard has a Scottish connotation as it is owned by the Wemyss family.

The ground is composed of moulded flint shingles and stones. The estate, 40 or so hectares, is in between le Puech de Dardaillon and the historic site of Espeyran. Espeyran was an important Hellenic trading post situated strategically on one of the arms of the Rhône. The site appears to have seen the passage of numerous commercial commodities. Archeological digs reveal the presence of many ceramics including different varieties of amphora coming from various regions of the Mediterranean. Amphorae were used to transport wine, amongst other things. One can therefore presume that wine has been flowing for many years around the Domaine Saint-Cyrgues.
