Schist soils and a dry climate furnish these wines with lovely personality and elegance.By law, the grapes harvested for Banyuls must contain 254g of sugar per litre. The hand-selected grapes are then de-stemmed, and fermentation is halted with the addition of grape brandy and the wine continues to macerate on its skins for a further 3 weeks before being aged in tanks.
Cabidos Petit Manseng Doux 'Cuvée Comte Philippe' 2007 (50cl)Our price: From £14.40The estate has been in the family since the 13th century when Navarre was a kingdom as powerful as the kingdom of France. Based in Bearn, but just outside the Jurançon appellation area and with Vivien de Nazelle at the helm, Domaine de Cabidos produces Vins de Pays made mainly from the local Petit Manseng. The sweet versions (les doux) are made using the ancient method of passerillage, which consists of dehydrating the grape by twisting the stem supporting the bunch. This cuts the supply of sap and the grapes are left to dry long into the autumn and sometimes into December. The results are stunning.

Tokaji Aszu 5 Puttonyos, 50cl, 2002Our price: From £27.67Crown Estates, the leading Hungarian owned producer of Tokaji Aszu forms part of Hungary's national heritage. Aszu wines are made when aided by climatic conditions, botrytis concentrates the grape sugars in the hand picked, raisin-like grapes - Aszu berries. The wine is aged skilfully in cask for a minimum of 3 years. The Puttonyos number, 3 to 6, indicate the amount of Aszu grapes used.
