Hervé Jestin is one of the most iconic winemakers in Champagne as he is one of the first to have introduced biodynamic principles to the Champagne region as he believes in producing wines that are harmonious and as natural as possible. Foliage is dominated by Chardonnay (60%) that comes from the Côte des Blancs and has partially spent time in oak. It has spent 36 months maturing “Sur Lattes” and being Extra Brut (less than 6g residual sugar) its richness is balanced by very good acidity.
