LIVING WINES COLLECTIVE – Sam Baron & Shaunt Oungoulian – Organic

The Populis project was kickstarted by four friends who met at winemaking school, namely Martha Stoumen, Diego Roig, Sam Baron, and Shaunt Oungoulian. They shared a desire to produce light-hearted, naturally made, extremely drinkable wines from exciting, organic vineyard sites throughout California.

The Populis white, a blend of Chardonnay (76%) and French Colombard (24%), comes from a cool vineyard site, planted at a relatively high elevation of 850 metres. The location of the vineyard is ideal as cooling effects from the San Pablo bay help to maintain freshness and acidity during the ripening period. The wine undergoes spontaneous fermentation using indigenous yeasts, before being aged on its lees for around 7 months. The result is a wine that displays ripe fruit, yeast and volcanic minerality on the nose, backed up by well-structured acidity and a slight spritz on the palate.
