The wines of the Filippo Filippi estate are characterised by the rugged, volcanic nature of their vineyards, and the basalt rock that forms the basis of their soils.

As a result, all of their wines display a remarkable minerality and salinity that render them a fantastic partner to a whole range of dishes.

The ‘Soave Castelcerino’ is produced using fruit from hand-harvested vines with an average age of 60 years old. Fermentation takes place in stainless steel tanks, before the wine is left to age on its lees for 4-6 months before bottling. The result is a mineral-charged wine with perfectly balanced acidity and pronounced aromas of apple blossom and ginger.
