A fine example of a cool-climate Cabernet Sauvignon. The fruit is sourced from the Yarra Valley, and the winemaking is as sensitive and precise as you would expect from Tom. The nose is perfumed and spicy, showing classic Cabernet Sauvignon dark fruit characters. Slightly lighter on its feet, the wine is more medium to full bodied. The palate is concentrated and silky with finely structured tannins, wonderful poise and great depth of flavour.Red Cabernet Sauvignon
Winemaker Tom Carson has won a whole host of accolades for his Yabby Lake wines. For the Distant Noises project, Tom set himself a very specific set of goals centring on the key objective of producing top quality Mornington wines at prices rarely seen in this region. In his eyes, he has achieved many of his goals at the premium end of Mornington, therefore the opportunity to create a more accessible range of wines that show off this fascinating part of Australia was not to be missed. And he certainly hit the spot – precise, clean and sustainable winemaking highlighting the cool climate potential that Mornington has to offer.
