Geographically protected vineyard – passerillage winemaking method
Headed by Vivien de Nazelle and his partner Meo Sakorn Series, Château de Cabidos and its surrounding Domaine is one of the South West’s more spectacular areas of land, a fact recognised by the government, who have rendered it a protected sight of natural beauty.
Located to the north of the city of Pau, situated in the Atlantic Pyrenees, the Domaine produces fantastic white wines, both sweet and dry, masterfully crafted by Vivien and his team, which also includes Swiss oenologist Jean-Michel Novelle.
The sweet versions are made thanks to the ancient method of passerillage, which consists of dehydrating the grape by twisting the stem supporting the bunch. This cuts the supply of sap and the grapes are left to dry long into the autumn and sometimes into December. The result is a sumptuous wine, showing powerful quince and tropical fruit aromas, balanced by fresh acidity and controlled levels of alcohol.
