The fruit was hand harvested and pressed in small batches before it was left to settle overnight. French oak barrels (500 litre puncheons) were used for fermentation before the wine was aged on yeast lees for 10 months. Expect aromas of citrus notes, stone fruit and subtle hints of spicy French oak. The palate has a rounded texture, focused acidity and excellent balance, leading to a long and persistent finish.White Chardonnay
Winemaker Tom Carson has won a whole host of accolades for his Yabby Lake wines. For the Distant Noises project, Tom set himself a very specific set of goals centring on the key objective of producing top quality Mornington wines at prices rarely seen in this region. In his eyes, he has achieved many of his goals at the premium end of Mornington, therefore the opportunity to create a more accessible range of wines that show off this fascinating part of Australia was not to be missed. And he certainly hit the spot – precise, clean and sustainable winemaking highlighting the cool climate potential that Mornington has to offer.
