Organic Champagne – unusual terroir – hard harvesting
The Champagne house of Pierre Gerbais is located in the village of Celles-sur-Ource in the Côte des Bar, a collection of vineyards at the southern tip of the Champagne appellation.
Rather than Champagne, the Côte des Bar previously identified with Burgundy, as its clay and limestone soils are seen as a natural extension of the vineyards of Chablis.
The team cultivate vines located on the sunny slopes of the Ource Valley, a unique microclimate that offers a variety of soils and unusual exposures.
Their Réserve blend is based on a single vintage, typically containing a blend of 50% Pinot Noir, 25% Chardonnay and 25% Pinot Blanc.
Produced from vines that are 30 years old, all of the fruit is hand-harvest and each variety then vinified separately before the blending process begins.
