Domaine des Hautes Terres
Gilles Azam bought the first vines for the vineyard of his Les Hautes Terres winery with an area of 13 hectares back in 2000. Using the height of the vineyard, exposure and organic viticulture, the winemaker opted for the elegance and complexity of the wines. Chardonnay was planted at maximum height to increase the acidity. The local Mauzak variety, which tolerates dry weather well, grows on limestone outcrops, and the slender rows of vines, including Chenin Blanc, face south and southwest. On the clay slopes there are vineyards with Cabernet Franc, Merlot and Malbec varieties.
The unique terroir owes its origin to the ancient sea, the waters of which covered the current vineyards more than 50 million years ago. Until now, the soil is replete with fossils of sea shells. The influences of the Mediterranean and Atlantic climates collide here, creating the conditions for the emergence of exceptional wines.

Dry white wine, from Chardonnay grapes grown in organic vineyards. Light, clean, fruity taste of the wine has fresh shades of citrus, nuances of peach, nectarine and apricot, smoothly flowing into a pleasant, harmonious aftertaste.
